Findings: Gravy is not covered, manager says left over gravy is stored in the cooling unit overnight (gravy made every other day), biscuits are made to order from a frozen state, desserts are kept 5 days before discard as per manager, at beginning of inspection both workers had gloves and hats on, scale for sandwich meats is clean and pop nozzles had not mold but evidence of sludge from the bottom of the bag in box syrup.
Results: Beard hair restraint is required, pop nozzles must be cleaned daily, gravy and any other food must be covered when not being used to prevent possible contamination and desserts that require refrigeration for safety must be dated (can be stored for 7 days before discarding).

Complaint: Hair in the coffee, heated food not cooked, back door cracked open for smoking, employees not washing hands, cockroaches, children as young as three in the kitchen, black mold in ice machine, cream, milk, and eggs are outdated.
Findings: Damage to a shed outside, evidence found of no hairnets, small amounts of unknown filth on interior of ice machine. Areas under equipment were starting to accumulate food debris. No other claims present.
Result: All employees must wear hair restraints when working in the kitchen, a regular deep cleaning schedule must be established in order to ensure ice machine interior and areas beneath kitchen equipment are being cleaned properly. Recommended weekly deep clean.
